Du möchtest deinen Rotkohl klassisch zubereiten wie von Oma? Mit meinem einfachen Grundrezept geht das kinderleicht. Damit schmeckt's garantiert wie früher. Jetzt ganz einfach den besten Rotkohl selber machen!
Rotkohl halbieren, vierteln und die äußeren Blätter entfernen. Den Strunk entfernen und den Kohl in dünne Streifen schneiden oder hobeln. Äpfel klein würfeln. Eine Zwiebel grob zerkleinern. Eine Zwiebel schälen und mit Nelken bespiken.
1 kg Rotkohl, 2 Zwiebeln, 5 Nelken, 2 Äpfel
Rotkohlstreifen in eine Schüssel geben und mit den Händen 5 Minuten mit Zucker und Salz verkneten.
2 EL Zucker, 1 TL Salz
Butterschmalz in einem Topf erhitzen und die Zwiebeln weich dünsten. Rotkohl und Äpfel zugeben und anschwitzen. Apfelsaft, Balsamico, die mit Nelken bespikte Zwiebel, Lorbeerblätter und die Zimtstange zugeben.
2 EL Butterschmalz, 300 ml Apfelsaft, 2 EL Aceto Balsamico, 2 Lorbeerblätter, 1 Stange Zimt
Rotkohl bei geringer Hitze mit Deckel ca. 45 Minuten köcheln lassen, bis die gewünschte Konsistenz erreicht ist. Zwischendurch mal umrühren. Lorbeerblätter, die mit Nelken bespickte Zwiebel und die Zimtstange entfernen.

Wenn du magst, kannst du deinen Rotkohl am Ende noch mit Speisestärke andicken. (1 EL Stärke mit 1 EL Wasser verrühren und unterheben.)
