Pilzrisotto ganz cremig und einfach – bestes Rezept

Mein einfaches Pilzrisotto ist schön cremig und dank gemischter Pilze total aromatisch. Ein Wohlfühlessen für die ganze Familie! Mit diesem kinderleichten Rezept und meinen 4 Tipps gelingt dir das beste Risotto mit frischen Pilzen.
Pilze putzen und in Würfel schneiden. Zwiebel fein hacken.
400 g Pilze, 1 rote Zwiebel
1 EL Öl in einen Topf geben und Zwiebeln andünsten. Risotto-Reis unterrühren und anschwitzen. Dann mit Balsamico ablöschen.
2 EL Olivenöl, 1 EL Balsamico Bianco
Soviel Gemüsebrühe zugeben, bis der Reis bedeckt ist. Bei mittlerer Hitze ca. 30 Minuten köcheln und nach und nach unter Rühren die restliche Brühe nachgießen. (Der Reis sollte immer mit Brühe bedeckt sein)
1 l Gemüsebrühe
Währenddessen restliches Öl in einer Pfanne erhitzen und die Pilze 5 Minuten anbraten.
Risotto mit Salz, Pfeffer und Muskat abschmecken und Petersilie, Parmesan und Pilze unterheben.
250 g Risotto-Reis, 70 g Parmesan, Salz, Pfeffer, Muskat

Wenn du getrocknete Steinpilze für dein Pilzrisotto verwenden möchtest, solltest du diese vor der Verwendung 30 Minuten in warmem Wasser einweichen.
